Ingredients
4 boneless skinless chicken breasts or thighs
(4 oz/125g each)
Salt and pepper to taste
3 Tbsp vegetable oil
1⁄2 each red, orange, and yellow sweet peppers,
sliced or diced
1-360 mL bottle Island Gurl Bahama Steamed
Tomato Sauce
2 tsp (10 mL) parsley
1 Recipe Sweet Potato Mash (islandgurlfoods.com)
Instructions
- Pat chicken dry with paper towel, place on a plate and season to
taste on both sides with salt and pepper. - Heat a large skillet with oil over medium-high heat, add two
pieces of chicken at a time and brown on both sides for
approximately 3 minutes per side until golden. Remove and
repeat with remaining chicken, set aside on a clean plate. - Add the bell peppers, cook for 3 minutes. Lower heat to medium
heat, add sauce, bring up to simmer, return chicken to the pan,
cover with lid slightly ajar and cook for 15 minutes until juices run
clear when pierced, or an instant-read thermometer inserted into
the thickest part of the meat registers at 165°F (74°C). - Remove from heat, garnish with parsley, serve with sweet potato
mash or rice.
