A vacation in a glass with essence of pineapple, coconut, lime and
Caribbean rum that is reminiscent of paradise.
Makes 2 cocktails
2 cups (500 mL) ice
1/2 cup (250 mL) cream of coconut
1 cup (250 mL) pineapple juice
1 oz (30 mL) freshly squeezed lime juice
2 oz (60 mL) Caribbean spiced or dark rum
1/3 cup (80 mL) simple syrup
Pineapple wedges for garnishing
Lime slices for garnishing
Edible flowers for garnishing
1. Add ice, cream of coconut, pineapple and lime juice, rum to a high-powered blender and blend until smooth.
2. Add simple syrup to taste, pulse.
2. Pour into two cocktail glasses, garnish and serve.
