Bahamian Steam Sauce is hands down one of the world’s best tomato-based

Serves 4
4 bone-in pork loin chops (about ¾-inch/2 cm thick)
¼ cup (60 mL) red wine or cider vinegar
Island Gurl Seasoned Salt to taste
½ tsp (2 mL) black pepper
¼ cup (60 mL) vegetable oil
½ medium onion, sliced
½ each sweet red, yellow and green peppers, sliced
1 bottle (370 mL) Island Gurl Bahama Steam Sauce
¼ cup water
1 Tbsp (15 mL) green onions, sliced or diced parsley, for garnishing
- Rinse pork chops and pat dry with paper towels.
- Pour vinegar over meat and sprinkle with seasoned salt and pepper on both sides.
- In a large skillet, heat oil over medium-high heat. Add meat in batches of two and sear on both sides for 3 minutes per side or until golden brown. Transfer to a plate lined with paper towels.
- Add onion, peppers and sauté for 3 minutes or until onions are translucent.
- Add sauce, water, bring to a boil, add meat and reduce to medium heat and simmer. Cover with a lid slightly ajar and cook for approximately 15-20 minutes until done and juices run clear.
- Serve with mashed potatoes and smothered with sauce, peppers and garnished with green onions or parsley.
